## Ingredients
- All ingredients are per demitasse cup
- Water
- 2 tsp fine-ground coffee
- Sugar
- 2 tsp for γλυκός (sweet)
- 1 tsp for μέτριος (medium)
- 0 tsp for σκέτος (plain)

## Directions
- Set the heat on your stove to medium.
- Stir in coffee and sugar.
- Place the briki over the burner and let it heat until it just begins to bubble around the edges.
- Don’t walk away from it because this process tends to happen quickly.
- Once it bubbles, lift it from the stove and and tap briki against counter 3 times.
- This may be a superstition, but it works!
- Place it on the stove and let it sit on the burner until the edges just begin to bubble.
- Once it bubbles, lift it from the stove and and tap briki against counter 3 times.
- Pour immediately into the demitasse cups, including grounds. This should form a light crema, or foam on top.
- After drinking, find Υιαγιά (grandmother) to do [καφεμαντεία](https://en.wikipedia.org/wiki/Tasseography#Coffee_reading) - reading your fortune in the remaining grounds.
