## Ingredients

> Ingredient amounts are for the amount of potatoes and chicken (1 lb potatoes, 6 thighs), may need adjustment for whole bird or more potatoes
- 6 bone-in skin-on chicken thighs or 1 whole chicken (cook times will vary)
- Kosher salt for dry-brine
- 1 lb golden Yukon potatoes, halved
- These are the small potatoes you don't need to peel
- The larger yellow potatoes with thin skin you can slice
- 2 tbsp fresh parsley
- For potato coating
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 1 tsp lemon zest
- 2 tsp salt
- 1 tsp pepper
- 1 tsp minced garlic
- Dash of garlic powder
- 2 tsp oregano
- Chicken broth (optional)

## Directions
1. [Dry brine](https://www.seriouseats.com/how-to-dry-brine) the chicken overnight in the refrigerator
2. Whisk together olive oil, lemon juice, lemon zest, salt, pepper, minced garlic, garlic powder, oregano
1. For a more traditional recipe (the one I grew up with), just use lemon and salt (and lots of lemon). You can then use this with the chicken or use herbs on the chicken for a different flavor profile
3. Add the cut potatoes and mixture to a bag and let it sit for about 20 minutes. Taste the potatoes and make sure you can taste the lemon and salt, if not, add more.
4. Remove potatoes from mixture, add to pan with a small amount of chicken broth
5. (optional if using an [[Mom's Lemon Chicken and Potatoes#^m8xmcs|herb butter]]) coat chicken with mixture
6. If using a whole chicken, stuff lemons that you squeezed for lemon juice into the cavity
7. Add chicken thighs on top or potatoes (or put whole chicken on raised rack in roasting pan), cook ~40 minutes (for thighs) on 350 or until potatoes are soft
1. For a whole chicken, add oil to outside of chicken to prevent it from drying out
8. Sprinkle parsley when ready to serve
## Notes
For extra flavor, prepare an herb butter and spread it between the chicken skin and meat. The butter should be soft but not melting. One suggestion: rosemary, thyme, and sage. You can also put oil on top or even more butter, but if you use butter make sure to tent with foil to not burn the butter. ^m8xmcs
